Perfect Fall Dinner

Yes, we had roast chicken (it is Sunday, after all).  But we rounded out the meal with roasted cauliflower and a new butternut squash dish.

Roasted cauliflower is one of the best, if not the best, ways to serve cauliflower.  It's easy and so delicious with all the caramelized goodness.

I also found a great recipe for butternut squash with red grapes that I was pretty skeptical about at first, but one bite made me a believer.  But the grapes added a really nice dimension -- not too sweet, but a good acidic counterpoint to the very sweet roasted squash.  This dish will find it's way back to our table several time.  As a side note, it would also be good over pasta.
