A Good Find


We've been trying many of the recipes out of The All-Natural Diabetes Cookbook. Tonight we hit on a keeper (although, to be fair, most of the recipes so far fall into that category). We had the Bottomless Burrito Bowl which was incredibly filling and flavorful. It was easy and would have been quick had I cooked the rice earlier since brown rice takes about an hour to cook. No matter.

It's essentially cooked brown rice, black beans, jalapeƱos, cilantro and lime juice. Cook all together until warm. Then each person gets a cup in a bowl and can choose what to top it with -- avocado, pepper jack cheese, tomatoes, green onion, lime, salsa, chicken (that's what I provided....you can pick whatever you want). Very good and satisfying. Plus if you are familiar with the exchange diet it was 1 1/2 starch, 2 vegetable, and 1 fat. Perfect for the evening meal.

(P.S. Sorry I've been so crappy about keeping up with the dinners.....but that's life!)
