Not long ago I found a recipe for pesto bean soup that I thought would be good to take to work. I've been planning to do it, but I never have enough time in the morning. Today I decided I would do the quick version: open and drain a can of beans, stir in desired amount of pesto, chop a celery stick and carrot and stir into beans and pesto. Good to go. It's delicious cold or warmed up. Plus it's healthy. I think other veggies would be good to add, perhaps some garlic, or red pepper flakes. Oh, and did I mention it's yummy?
