Sunday Chicken

It was a dark and stormy day.....Oh wait, that's another post! But seriously, it was rainy and Big J is home and I spent the afternoon with Ms. A (aka Dissertation Wife) at the library so it seemed only logical that we have our traditional Sunday Chicken Dinner. Big J did all the usual things in terms of roasting the chicken. He added fingerling potatoes to the pan during the last half hour of roasting. When I got home from the library (joined by Ms. A, our lovely and most welcome dinner guest) I prepped the asparagus for roasting (simply placed it on a pan with a drizzle of olive oil and a sprinkle of salt, roasted for about 15 minutes at 450 degrees). I also prepared the salad: baby arugula blend, apples, Parmesan, and a light vinaigrette of Dijon, red wine vinegar and canola (a la Bouchon). A simple and delicious spring meal made even better by the company.

And in a surprise after dinner event we all enjoyed a Hanna Montana dance party!
